The avocado revolution came quite late in the day to me, since I’ve discovered it I can’t get enough of it. One of my other firm favourites is hummus, which personally I think goes great with avocado.
So here’s my no fuss recipe for a great tasting hummus
Makes 6 servings
Ingtedients:
400g tin of chickpeas
1/2 clove garlic
Juice of 1 small lemon
2 tablespoons tahini paste
75ml rapeseed oil
75ml olive oil
Salt and pepper
Method:
In a bender blitz up all the ingredients adding the oil last until you get the consistency you like for your hummus.
I find the combination of oils gives a more balanced flavour, sometimes just using olive oil can make the flavour a little bitter.
On the nutritional front chickpeas are packed full of plant based protein which is great for those of you who follow a meat free diet.
It will keep covered in the fridge for a few days.
