I love ice cream as much as the next person, but I don’t have time to make it from scratch. So here is my cheats version. 5 minutes to dreamy creamy nice cream.
Now you might be thinking why I keep saying nice cream, well the reason is, this recipe is dairy free. Which is great for those who are lactose intolerant or follow a vegan lifestyle.
Remembering the key to becoming a culinary god or goddess is preparation. It’s all in the mise en place!
100ml coconut milk
splodge of vanilla bean paste
1 tbsp honey
The night before you want nice cream, peel and chop the bananas, place in a bag and freeze.
Now you want a nice cream right?
To make the strawberry sauce, in a blender blitz the strawberries with the honey, I sieved mine to remove the pips but you don’t have to do that if you don’t want to. Put to one side.
Rinse the blender and take the bananas out the freezer, place in a blender with the coconut milk and vanilla bean paste and blitz until smooth.
To serve place banana nice cream in bowl and swirl in some strawberry sauce.
There you go, ice cream to go in minutes!
